Cherry Garcia Brownies Recipe
I love Ben and Jerry's Cherry Garcia ice-cream, so this recipe screamed out at me to get in the kitchen and bake. I had to adjust the recipe as I couldn't find maraschino cherries, but it seems to work just as good.

Brownie Layer
1 brownie mix, or your favourite brownie recipe (approx 9" x 13")
Once cooked, leave to cool in the tin
Cherry-Chocolate layer:
1 cup slightly softened butter
3 1/2 cups icing sugar
1/2 cup dark chocolate chunks, chopped into small pieces (chips would also work)
200g tub of glace cherries
4-5 tablespoons cherry juice
In the bowl, combine the butter and 4-5 Tablespoons of cherry juice. Beat until the butter is smooth. If the juice isn’t totally combining with the butter, don’t worry, just start adding in the icing sugar. Slowly add the icing sugar and beat until combined. Increase mixer speed to medium high and beat for about a minute and a half. Remove the cherries from the tub and give them a rough chop (you can use as many as you like). Roughly chop your chocolate chunks and fold it into the filling with the cherries.
Spread over the top of the cooled brownies.
Chocolate layer:
2 1/4 cups dark or milk (depending on your own preference, I prefer milk) chocolate
3/4 cup butter
Melt the chocolate and butter together in the microwave for 30 seconds. Stir, and repeat for 30 more seconds. Continue to do this until chocolate is smooth and melted. Spread over cherry-chocolate layer. Let set up until hardened (place in the fridge if you need them set faster) and then cut, serve and enjoy!!
