Cadbury Creme Egg Cupcakes



I'm a little late with making these since Easter was almost 2 weeks ago, but I have been wanting to try them since last year and had everything ready to make them. So I was with 2 of my nieces at the weekend, I thought it was a good time to give it a go.

I did cheat with these and didn't make anything from scratch, but the same principles would apply if making them from scratch.



Ingredients

  • Chocolate cupcake packet mix
  • Mini creme eggs for inside the cupcakes
  • Pre-made butter icing or cream cheese icing
  • Yellow food colouring
  • Mini creme eggs or cadbury's mini eggs for decoration

Cupcakes

  • Mix up the recipe for chocolate cupcakes - I used a packet mix of chocolate red velvet as that was all I could find in the supermarket
  • Divide the mixture between the cases
  • Place a mini creme egg standing up into the centre of the cupcake mixture. The mixture didn't quite cover the mini egg
  • Bake cupcakes according to the instructions
  • Remove from oven and allow to cool. The creme egg should now be covered as the cakes will have risen in the oven
Decoration
  • I purchased pre-made cream cheese frosting as it was whiter in colour and I wanted it to look a bit like a fried egg with the white and yellow frosting
  • Cover the tops of the cupcakes with white frosting. You can either spread it on or pipe it on.
  • Once all cupcakes are covered with a layer of white frosting, add yellow food colouring to the remainder of the frosting
  • Using a plain round nozzle in a piping bag, pipe circles of yellow frosting in the middle of each cupcake
  • To finish off use cadbury's mini creme eggs or cadbury's mini eggs
  • One of the creme eggs had split in half, so I decided to do that with the others as I thought it looked good. I didn't have enough creme eggs so I finished the others off with the mini eggs and I think they still look effective.

My nieces loved the novelty of these cakes and enjoyed being able to join in on the fun.
