Slimming World Roulade


I made this Roulade recently which is only 1/2 a syn on Slimming World for the whole cake. I had a quarter serving, which is only 0.125 of a syn. I thought it tasted lovely and it was so easy to make. I had a spare 15 - 20 mins while my baby slept, then finished it off with the fruit later once it had cooled down. I added strawberries and blueberries, but you could add any combo of fruit.


As an added addition you could drizzle a fat free yoghurt over the roulade.

Ingredients
1 x 250g Tub of Quark 
4 x Eggs
5 x Table spoons Powdered Sweetener
1 x Tea spoon of Baking Powder
1 x Tea spoon of Vanilla Essence
Fruit of your choice
Baking tray
Baking Paper/Liner
Preheat the oven to 180 °C

Method
Separate the egg white from the yolks into 2 bowls.
Whisk the yolks with half a tub of quark, baking powder, vanilla essence and 4 tblsp sweetener.
In a separate bowl, whisk the egg whites until stiff.
Then whisk half the egg whites to the egg yolk mixture, then fold the rest in.
Pour into a lined baking tray and bake in the oven for 15-20 mins at 180 degrees.
Leave to cool then spread the rest of the quark (mixed with the other tblsp of sweetener) over the sponge.
Scatter the fruit over the sponge and quark and roll up like Swiss roll.
Optional - Sprinkle more sweetener over the top if needed.
